Day Four

I bought a scale today to see how I was progressing toward my goal. My goal weight is 180lb and I am currently at 280lb. The last time I weighed myself I was 300lb. So far I have lost 20lb (including the months that I was on parental leave. I am hoping to Weigh as close to my goal weight as possible by this time next year. I know 100lb is a lot and don't expect to loose it all. I also checked my blood sugar and it was 13...a little high however to be expected as I just started taking my meds again. Last night I also walked to where I will be working to see how long it would take. On the way there I cut across parking lots and it took 10 minutes. On the way back I followed the streets and it took 15 minutes. For health reasons I think I will take the longer route. The vegetarian diet is going well. I have not had meat since Friday. Wish me Luck :).

Day One

Today i cooked some meals ahead for when I go back to work and froze them. I made a vegetarian stir fry with rice as well as a vegetarian Sheppard pie. I had the shepherds pie for lunch and the stir fry for supper. They were both pretty good. I did not feel as hungry today as other days and am looking forward to tomorrow. I should get a scale so I can monitor my weight. So far I'm happy with the diet...still a few cravings for some meat.

Breakfast

Whole Grain toast with a 2 egg omelet containing tomatoes cheese and onion. MMMMMMM GOOD YAHHHH. Oh yah...and a glass of milk.

Vegetarian

I have decided to go Vegetarian for health reasons. This is not because I believe it is healthier to not eat meat but because I need to loose weight. Also because I read an article that advised that reducing the fats from meat in your diet can result in your body using the insulin you produce more efficiently. So I will be trying this diet for about a year. I also read that a journal (for me a blog) will help me stick to it and keep track of how I am doing. I also figure that if I do a blog people can read and post comments I may get some good advice/ideas to help this diet become successful. So here are my goals:
  • To manage my Blood Sugar levels within optimum levels (as I am Diabetic) while eating a vegetarian diet.
  • To Exercise more (walk to work, gym, etc).
  • To Experiment with the foods I eat and try and eat healthy.
  • To loose 120 pounds to achieve a healthy weight.
I know some of these goals are extreme and will take some time. I am giving myself 2 years for the weight goal. Hopefully this Blog will help me stay on track. The overall goal is to not have to take insulin any more to maintain my diabetes. The reason for this is that insulin is expensive and if I move back to PEI I may no longer have medical benefits. Any way...wish me luck...I already want to cheat...lol. So starting tomorrow night I will be blogging what I have eaten for the day and what the results are.
